The process
We were tasked by StiR to travel to key European markets to discover the F&B landscape: what works, what doesn’t and where the gaps are. We got under the skin of the city to understand how locals eat, drink and enjoy life.
For this project, like in every other, it was key for us to keep an open mind, as we moved through places like Lake Garda, Warsaw and Belfast. Acting like a sponge, we ate our way through these cities, taking notes and photos along the way, while interviewing as many people as possible, whether they’re high-profile restaurateurs or taxi drivers. Throughout, we drew on our decade-long experience to see a place for what it really is, from the way its streets are laid out and the buildings are designed, down to what people drink after work, and where.
